It has been two months since I blogged here.  My apologies....it was "the economy." Not really but that seems to be everyone's excuse nowadays.
Anywho, back to business.  Um, well...let's post a recipe, shall we?  Today I'm planning to make chocolate peppermint cookies.  I make them every year for Chirstmas.  They're super easy which is my kind of baking.
Ingredients
·        1 (18.25 oz) package of devil’s food cake mix
·        ½ cup of butter or oil
·        1 egg
·        ½ tsp peppermint extract
Directions
·        Preheat oven to 350 degrees F.  Grease cookies sheets or use parchment paper.
·        In a medium mixing bowl, beat together butter, egg and peppermint extract until smooth and creamy.
·        Stir in the cake mix.
·        Roll teaspoonfuls of dough into balls and place them 1 inch apart onto cookie sheet.
·        Bake for 8-10 minutes in the oven.  Watch very closely and when they start to crack they are done.
·        Cool on baking sheet for 5 minutes; transfer them to a cooling rack.
Pop them in your mouth and enjoy.  YOu can also sprinkle with powdered sugar for a festive look.
